Zucchini Ingredients:
- 2 kg zucchini - medium size
- 400g. minced meat
- 2 cups of egyptian rice - for stuffing
- 1/2 tsp seven-spices
- 1/2 tsp salt
- 50g. pinenuts
- 1 tbsp ghee
Okra Ingredients:
- 1 kg fresh okra
- 500g. lamb meat - cubes
- 200g. tomatoes
- 1 cup fresh cilantro - chopped
- 10 garlic cloves
- 2 cups water or broth
- 2 tbsp tomato paste
- 4 tbsp pomegranate molasses
- 3 tbsp ghee or oil
- 1 tbsp salt & pepper to taste
- Enough vegetable oil - for frying the okra
Directions:
Part 1: to prepare the zucchini:
- Wash and core the centre of the zucchini , using a corer, then wash the rice & soak for 30 mins then strain well from excess water, then in a large mixing bowl add the rice, minced meat, salt and spices, mix well together & set aside.
- Next fry the pine nuts while constantly stirring until they turn a golden brown then add to stuffing mix.
- Now start stuffing the zucchini by hand with the prepared mix half way through to allow enough room for the rice to expand when cooking, we test the zucchini by feeling the stuffing with our finger to adjust the quantity of stuffing as needed.
Part 2: to prepare the okra:
-Remove the top stem of the Okra، then wash & strain well from excess water.
-Heat the oil and deep fry the okra until golden؛ then finely chop the garlic
-In a pot on medium heat, add the ghee and saute the meat and until well browned, then add the water or broth over the meat & bring it to a boil for 8 -10 mins
-In another saute pan add the rest of the ghee, garlic and cilantro and saute until golden & fragrant.
- Peel & de-seed the tomatoes & diced into small cubes, then when the meat has fully cooked add the tomato paste, salt, pomegranate molasses and garlic and leave the mixture to simmer on medium heat until the sauce thikens, stirring occasionaly then we add the tomatoes to the sauce and mix then we add the zucchini to the mixture & simmer for 30 minutes, then we add the okra & simmer on low heat for another 25-30 minutes.
(take care not to crush the okra while stirring)
-Finaly transfer the Zucchini in Okra to a serving dish of your choice & serve hot alongside vermicelli rice.
