Ingredients:
- 1 1/2 cups of fine bulgur
- 1/2 cup of flour
- 1 small onion
- 1 teaspoon of dried basil
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- 3 litres of water
- 1 tablespoon of vegetable oil
- mix of smashed garlic and lemon juice
- olive oil for serving
Preparation:
- soak bulgur in water for 5 mins then drain well.
- peel the onion and finely grind with salt, basil, and pepper.
- add the onion mix to the bulgur, rub with your hands till its softened. Add the flour, knead well into a dough.
- form small balls from the dough then leave them on a tray for almost 2 hours or until they have dried.
- in a cooking pot, pour water and oil bring to boil.
- add the kibbe balls, boil till they have cooked, keep stirring gently when needed.
- add garlic mix , stir . Pour in serving dishes garnished with olive oil.
kibbet Rahib in Tray
Ingredients:
- 2 1/2cups of fine bulgur
- 1/4 kg of potato
- 1/4 cup of flour
- 2 spoons of minced basil
- 2 teaspoons of salt
- 2 spoons of kibbe pepper (dikka) or 1 spoon of kibbe pepper and 1 spoon of dried marjoram.
- 2 small onions
Preparation:
- boil the potato till well done, peel and mash
- soak bulgur in water for 5 mins and drain well.
- grind fine the onion with salt and spices.
- add the onion mix to the bulgur, rub with hands till it’s soft, add the mashed potato, flour, and knead into a dough.
For filling:
- 4 to 5 sliced onions
- 1/2 cup of raisin
- 1/2 cup of rough crushed nuts.
- 1 lemon peel
- 1 teaspoon of salt
- 2 tablespoons of pomegranate sour sauce ( optional)
- 2 tablespoons of olive oil
- 1 tablespoon of sumak
- mix all ingredients together
For garnish:
- 1/2 cup of olive oil
- 2 tableapoons of sesame.
- mix all filling ingredients together with a bit of sesame and spread in a medium size oven tray
- spread a layer of kibbe dough on top of the filling, rub your hands with olive oil, and smooth the kibbe very well.
- using a knife. Segment the spread layer of kibbe dough, pour the oil, sprinkle the rest of sesame, then bake in the oven on medium heat till it has turned a golden color.
