Ingredients:
- 2 kg cauliflower
- 1.5 cup basmati rice
- 400g minced beef or lamb
- 2 tablespoons ghee
- 1.5 cup water
- 1 Teaspoon cumin
- 1 Teaspoon salt
- Vegetable oil for deep frying
Directions:
- Cut cauliflower in medium-sized florets, wash and strain any excess water
- In a deep frying pan with vegetable oil, fry cauliflower until golden, then set aside over paper towels to strain any excess oil
- in a saute pan, add the ghee and sauté the beef or lamb untill it has cooked & set a side
- In a suitable deep pot, coated with ghee at the bottom, we start arranging 3/4 of the fried cauliflower on the bottom then, add 1/2 the amount of meat on top
- Add 1.5 cup of water
- Add the basmati rice, the cumin and salt to taste
- bring the pot to a boil then cover & simmer for 25-30 minutes on low heat until the rice has fully cooked and is fluffy
- When ready to serve, flip the pot over the serving dish. Garnish with the remaining meat & cauliflower. Serve hot next to you’re choice of salad or refreshing yogurt
