Ingredients and quantities for 4 persons:
2 cup Egyptian or Italian rice / optional
1 cup lentils (green color)
1 teaspoon salt
4 cups water
For decoration:
3 large onions
1 tablespoon ghee
Method of preparation:
- Clean the lentils and wash well and then add to the cooking pot with water and leave to boil, reduce the heat and cook lentils on a low heat until it is cooked for nearly half an hour; Note leave the cooking pot uncovered.
- During this time wash the rice well and then soak in water for 10 minutes and drain
- Add the rice over the cooked lentils with salt and mix together and then cover the cooking pot and leave until the water dries and rice is cooked .
Peel the onions and chop in thin slices ,add onions and ghee, to a frying pan and stir untill brown in colour.
- Remove the onions from ghee by skimmer stainer and set aside, then pour the remaining ghee over the rice and lentils and stir gently with a fork and leave for 5 minutes. Then remove from stove .
- pour mujadara in a wide serving dish and decorated with fried onions it is served hot and next to cucumber_yogurt salad,or any vegetable salad of your choice.
