Ingredients:
- Cooked green beans
- 2 cups of rice (soak for 10 mins)
- 1 onion, diced
- 1 tablespoon ghee or vegetable oil
- 1 teaspoon salt
- 3 cups of water or broth
Preparation:
- In a saucepan add some gee or oil & saute the onion till translucent & golden
- Add the cooked green beans and stir
- Drain the rice before adding to the saucepan. Add salt to taste
- Add the water or broth & bring to a boil.
Once boiled reduce to low heat, cover & simmer for 15 minutes until the rice is fully cooked
- Serve next to minted cucumber yogurt.
*To prepare the minted cucumber yogurt
Ingredients:
- 500g Greek yogurt
- 4 cucumbers, diced
- 1/4 teaspoon salt
- 1/3 teaspoon dry mint
Preparation:
- In a deep mixing bowl add the yogurt, salt, cucumber & dry mint and whisk well until smooth.
Serve in a deep dish garnished with some more dry mint.
