Ingredients:
- 1Kg fish fillet as desired
- 3 cups of fine bulgur
- 2 small onions
- 1 tsp marjoram
- 1/2 tsp cumin
- 3 tbsp coriander - chopped
- 1/2 tbsp lemon zest
- 1/2 tbsp orange zest
- 1/2 cup olive oil
- 1/4 cup pine nuts
- salt to taste or as needed
- 1 tbsp seven spices
Directions:
- Wash the bulgur well & strain, set aside for 5 mins
- In a food processor mix the bulgur, onions, marjoram, cumin, coriander, lemon zest, oranges zest and process until a consistent kibbeh dough is established.
- salt the fish fillet & season with the seven spices. Fry the fish & set aside
- In a deep oven baking dish brushed with 1/4 cup olive oil; layer half the amount of the kibbeh dough, arranging the fish filets on top of the kibbeh dough.
- Then layer the second half of the Kibbeh dough over the fish fillets layer, using a spatula or the palm of your hand arrange the surface of the kibbeh dough until smooth and equally spread out.
- Sprinkle the pine nuts on top as desired and brush with the remaining 1/4 cup of the olive oil.
- Bake in the oven on both sides at 350 degrees (F°) or 175 degrees(C°) depending on the type of oven for 35 - 40 mins or until it becomes golden brown
- Serve hot next to tahini and salad as desired.
