Chard Pastries
Chard pastries:
Ingredients:
-1 kg of chard leaves.
-3 big onions
-2 tablespoons of samak
-1 tablespoon of salt
-120 ml or 1/2 cup of pomegranate sour sauce
-4 tablespoons of olive oil
-1/4 cup of dried grapes (optional)
-1/4 cup of chopped walnut (optional)
-2 tablespoons of sesame
Dough ingredients:
- 6 cups of flour
- 1 tablespoon of salt
- 1 1/2 tablespoon of sugar
- 1/4 cup of vegetable oil
- 3 cups of water(as needed)
- vegetable oil to spread the dough as needed.
Filling preparation:
- wash and shop coarsely the chard.
- chop onions smooth chop
- add to chard: salt, chopped onions, samak, 3 spoons of pomegranate sour sauce quantity, and dried grapes (optional)
- mix well together and let drain for 2 hours or more.
- add the rest quantity of pomegranate sour sauce
Note:
adding walnut and sesame is optional
Mix well.
Dough preparation:
- combine together sugar, salt, half of warmed water quantity and mix well together.
- Pour the oil, then add the flour gradually.
- Knead then add the rest of water quantity as needed.
- knead till have soft and elastic dough.
- drizzle oil on the dough and cover it for half hour, then cut the dough into small balls.
- roll each ball into circle and spread using oil.
- add 1 tablespoon of the filling in the middle of each circle.
- close it firmly from 3 sides forming a triangle.
- put in baking trays.
- spread sesame on the surface if desired.
- bake the pastries in a preheated oven at 200 c for 20 mins or more until they are golden in color.
- served hot or cold.
