Ingredients:
500g pasta (of choice)
1/2 cup parmesan cheese - for garnish
Pesto sauce:
1 cup basil leaves - fresh
1/2 pine nuts - fried
1/3 cup parmesan cheese
1/2 olive oil
2 garlic cloves - peeled
1/3 tsp black pepper
1/3 tsp salt
Directions:
-In boiling water cook the pasta for 10-15 minutes. Once cooked, wash under cold water. Strain and leave aside
-To make the pesto, add the following ingredients: basil, garlic, pine nuts, cheese, salt and pepper in a food processor or blender
- purée all altogether until they become smooth in texture
- while the food processor is still running, slowly pour olive oil until smooth (or to desired consistency)
-In a suitable pot, pour pasta over the sauce mix. Stir together until well combined
-Serve immediately, garnish with fresh Parmesan cheese
