Ingredients:
- 1kg fresh zucchini
- 1 cup Egyptian rice
- 300g minced meat
- 1 kg fresh tomatoes
- 1 tbsp ghee
- 1/2 tsp 7 spices
- 1/2 tsp salt
- 1 tsp toasted pine nuts
- 1 tsp smashed garlic
- 1/2 tsp mint flakes
Preparation:
1- Wash zucchini, cut off the zucchini stalks. Carefully hollow out the zucchini from the stalk end by pushing and turning a manakra into the flesh. Keep hollowing until you have a generous cavity.
2- Sauce
- Heat and boil the tomatoes, then peel, squeeze and strain in a suitable pan
3- Filling
- Rinse and drain rice
- In a bowl, combine rice, meat, ghee, spices, salt, fried pine nuts and mix altogether

- Stuff zucchini to half way and add to the sauce pot
- Add salt and bring to boil
- Once boiled, add crushed garlic and mint flakes, then keep on heat for approximately 1 hour until well cooked
- Serve hot
