Zincle Dough Ingredients:
- 1 cup fine bulgur, soaked for 15 min &drained
- 1/2 cup flour
- 1/3 cup water - for kneading
- 1/2 tsp salt - for zincle dough mix
- 2 ltr. water - for boiling zincle
- 1 tsp salt - for boiling zincle
Yogurt Sauce Ingredients:
- 3 cups yogurt
- 1 cup cold water
- 1 tsp salt
- 1 tsp dry mint
- 1 garlic clove - crushed
Directions:
- In a suitable mixing bowl, add the soaked bulgur, flour, salt & stir well, then 1/3 cup water & knead the mixture well to get a firm dough; then portion the zincle dough into small balls using wet hands.
- Next in an appropriate saucepan, bring 2 liters of salted water to a boil, then add the zincle dough balls and stir; simmer over medium heat for 15 minutes until fully cooked, then drain & set aside to cool completely.
- Then in a suitable mixing bowl, add the yogurt & the cup of cold water, salt and crushed garlic & mix well then add the cooled zincle dough balls and dry mint to the yogurt & stir well.
- Served cold next to kibbeh dishes or next to fried vegetables.
