Raw Kebbe
Ingredients:
500g fat-free beef meat (beaten)
2 tsp fine brown Bulgur
1 onion medium sized
8 green Basil leaves
½ tsp cumin
½ tsp salt
2 ice cubes or 3 spoons ice cold water (for kebbe)
Cold water to spread kebbe mixture
*Garnish:
50 g animal fat(optional)
50 g walnuts
50 g onion
¼ tsp salt
Method of preparation:
- wash Bulgur and drain very well.
- grind meat & ice cubes or ice cold water in food processor ,until we get a smooth ,viscous sticky mixture.
- onion and basil are also grind or knocked in kebbe mortar.
- with hands ,mix well meat, spices, onion, basil and salt.
- add Bulgur while kneading and rubbing well, until we get a compact paste , medium soft.
- wet hands with water and spread kebbe in serving dish.
- dish is decorated with well grind animal fat, onion, and walnuts (optional).
- add olive oil over the kebbe.
- it is served cold.
