Ingredients:
- 500 g shrimp
- 250 g calamari
- 500 g mussels
- 2 cups of Italian rice
- 1/2 green bell pepper, sliced
- 1/2 red bell pepper, sliced
- 1/2 yellow bell pepper, sliced
- 1/2 cup of green peas
- 1 Large onion, sliced
- 2 garlic cloves - minced
- 3 tbsp olive oil
- 1/2 tsp saffron threads
- 1/2 tbsp curry powder
- 1/2 tbsp turmeric
- 1/2 tbsp salt
- 1/2 tbsp paprika
- 2 cups fish stock
- 1 cup water
- 1/2 tbsp cinnamon
- 1 lemon quartered for garnish
Directions:
1- In three separate bowls add the shrimp, mussels and calamari separately seasoning with salt & pepper
2- In a saute pan over high heat add the shrimp, mussels and calamari, with 1 cup of water & bring to a boil allowing to simmer for 10 mins then set aside.
3- In a large saute pan, over high heat add the olive oil & saute the onion & garlic stir until translucent.
4- Then add the coloured peppers, peas and all the spices & stir all the ingredients. Allow to simmer for 10 minutes then remove from the heat and set aside.
5- In a large deep pot, add the rice and the 2 cups of fish stock then add the vegetables & spice mix and bring to a boil. Add half the shrimps, muscles & calamari and save the rest for garnish. Cover and simmer until rice has fully cooked.
6- transfer the rice onto your choice of serving dish & top with the remaining shrimp, calamari & mussels. Garnish with the lemon slices & serve hot.
