Step 1.
Chicken ingredients and preparation:
-1 whole chicken
-2 tbs yogurt
-1/2 tsp of peppers
-2 tbs of vegetable oil
Spices for boiling the chicken:
2 cardamom seeds
2 bay leaves
1 Cinnamon stick
1/3 tsp black pepper
1/3 tsp 7 spices
Prepare a mixture of spices, yogurt and vegetable oil
Step 2.
Chicken filling ingredients:
-100 g of minced meat
-1/2 cup of egyptian rice
-1 tsp of ghee or butter
-2 tbs of pine nuts
- in a pot, add the ghee or butter and fry the pine nuts.
- remove the pine nuts, and add the minced meat, allow to cook
- add the rice, peppers and salt
- add enough water, cover the pot and cook on a low heat
- add the fried pine nuts and mix it in with the filling
Step 3.
- stuff the chicken with the mixture. Close the opening using a needle and thread
- put the chicken in a appropriate pot, cover with water and the spices we mentioned above. Boil for around 1 hour or until the chicken has cooked.
- put the chicken in a tray
- brush with the yogurt, spices, and oil mixture.
- place in a preheated oven on 350°. Allow the chicken to brown
Step 4.
Rice mixture ingredients:
-2 cups of Basmati rice
-300 g of minced meat
-3 cups of chicken broth
-1 tsp of 7 spices
-1 tsp of salt
To garnish:
Fried nuts, quantity as desired.
-in a cooking pot, add some ghee, and the minced meat, allow to cook
-add the rice, chicken broth, spices and salt, stir all of the ingredients keeping on a low heat until it cooks
Step 5.
-Transfer the rice to a serving dish, place the roasted chicken and garnish with the fried nuts
Serve hot
