Ingredients:
-1 whole chicken cut in pieces
-3 cups Basmati rice or american -washed and soaked for an hour
-200g carrot - zest
-4 tomatoes - peeled and chopped into cubes
-3 onions - sliced
-5 garlic gloves - crushed
-1 tbsp zest of ginger
-2 tbsps tomato paste
-2 tbsps vegetable oil
-1 tsp cumin
-1/2 tsp cinnamon powder
-1/2 tsp dry coriander
-1/2 tsp nutmeg powder
-1 tbsp salt
-fried nuts to garnish
To boil the chicken:
-2 cinnamon sticks
-2 dry limes
-6 cardamom seeds
-5 bay leaves
-1 tsp chicken spices
Marinate preparation:
-3 tbsps yogurt
-1 tbsp tomato paste
-1 tsp cardamom spice
-1 tsp cumin
-1 tsp chicken spices
Preparation:
-Clean the chicken
-in a suitable pot, pour oil and cook
chicken with the spices mentioned above
-remove the foam from the surface
-keep on low heat until well cooked then remove
-in another pot, pour the oil, add the onion and stir until it has browned
-add the garlic, carrots, tomatoes, and stir together
-add the spices mentioned above, tomato paste and stir
-add the rice and salt
-pour a suitable quantity of chicken broth. Allow to boil, once boiled cover the pot and keep on low heat until cooked
-in a suitable tray, place the chicken and brush all over with the marinade
-place in a preheated oven until golden
-transfer the rice to a serving dish
-spread the toasted chicken all over the rice and garnish with fried nuts
