Ingredients of kibbeh dough:
- 1 kg fine bulgur
- 1 kg fat free meat
- 1 big onion
- 10 fresh basil leaves
- 1 tsp 7spices
- 1 tsp cumin
- 1 tsp chilli paste
- 1 tsp salt
Dough preparation:
- rinse and drain bulgur and keep aside
- grind meat with a grinder or food processor until it is soft and smooth
- grind onion,spices and basil
- in a suitable bowl, add bulgur ground meat, onion mixture, chilli paste and salt
- rub with hands or put again in a food proccesor until you get a dough
Filling ingredients :
- 1/2 kg minced meat
- 2 big minced onions
- 1/4 cup toasted pine nuts
- 1/2 tsp sweet pepper
- 1/2 tsp 7spices
- 1/2 tsp salt
- 1 tsp ghee
Filling preparation:
- in a suitable pan, add ghee, then onion and stir until golden
- add minced meat and cook
- add pine nuts, spices and stir
- turn off the stove and leave allow to cool
kibbeh bags preparation:
-divide the dough into equal balls
-in each ball, make a small hole in the middle and stuff with the filling then close horizontally. (as shown)
-brush an oven tray with ghee and place the kebbeh, then bake
- serve hot along with green salad, raddish zest, lentil soup, or yogurt-cucumber salad.
